Kids love muffins. And what kid can resist a chocolate muffin?
Today's recipe is a healthy kid-friendly muffin that is packed with protein from a whole block of tofu.

Servings: 3-4

Ingredients
1 package tofu
2 bananas (If you want muffins resembles bread pudding, add 1 more bananas.)
1 egg
¼ cup of coconut oil
¾ cup honey
1 tsp cinnamon
¼ tsp baking power
1 tsp baking soda
½ tsp salt
¼ cup of cocoa powder
½ cup oats
1½ cups whole wheat flour
½ cup hazelnuts, chopped

Instructions
Preheat your oven to 360'F, press tofu for 20 mins.
Mix 2 bananas, egg. pressed tofu. Beat well until smooth until no lumps remain.
Add melted coconut oil, honey. Continue whipping with a mixer.
Add a teaspoon of ground cinnamon, baking powder for dough, baking soda, salt. Stir again.
Add cocoa powder and oatmeal. Stir until a homogeneous mass is formed.
Add whole-grain flour and mix well with a mixer, add chopped hazelnut. The batter is ready.
Pour the batter into a muffin tin lined with unbleached baking cups.


Bake the muffin for 20 mins until the tops are crisp.
Be sure to let them cool for at least 15 mins.
Sprinkle with powdered sugar before serving.
