General Tso's Tofu is one of our favorite tofu recipes. It has a perfect balance of crispy crunchy bites covered with sweet and spicy sauce.

Ingredients
For Crispy Tofu:
I block of firm tofu, pressed cut in cube
5 tbsp cornstarch
2 tbsp soy sauce
2 tbsp oil
Sweet & Sour Sauce:
1/2 cup water
2 tsp cornstarch
2 tsp oil
2 garlic cloves, minced
1 tsp grated ginger
1/2 tsp red pepper flakes
2 tbsp tomato paste or ketchup
4 tbsp maple syrup
1 tbsp soy sauce
Instructions
For the Sauce:
Mix the cornstarch and water in a bowl, set aside.
Heat a pan over medium heat and add 2 tsp oil. Add grated ginger, garlic, pepper flakes and sautee few seconds.
Add remaining ingredients and cook for 3 minutes.
For Crispy Tofu:
Press tofu with Tofudee Tofu Press for 20 minutes, cut in cube shapes.
Transfer tofu in a bowl. Add cornstarch, soy sauce, oil and mix well.
Heat some oil on a skillet and fry tofu for 3 minutes on each side.
Add the sauce to the skillet and coat tofus with sauce.
Garnish with sesame, spring onions, and lemon wedges on the side.
