These vegan mini quiches make the perfect appetizer for holiday gatherings or Christmas morning breakfast! Tofu takes on any flavor, making the recipe versatile to add or combine so many different variations of flavors and ingredients!
For this recipe, we used vegan Swiss cheese, peppers, mushrooms, spinach, and scallions (delicious and has those Christmas colors), but other options to try, or mix and match are (1) Broccoli and vegan cheddar, (2) Tempeh Bacon and mushroom, and (3) Sundried tomatoes & mozzarella.

INGREDIENTS
1 Package of Pre-made Pie Crusts
1 Package of Tofu
¼ Cup Nutritional Yeast
⅓ Cup Soy or Alternative Milk
½ Tsp Garlic Powder
1 Tsp Salt
½ Tsp Pepper
1 T. Vegan Butter
½ Cup Swiss Cheese, diced or shreds
¾ Cup of Mushrooms sliced
1 Cup of Spinach, chopped
1-2 Shallots, diced
½ Cup Red Pepper, diced, reserve some thin slices for topping

INSTRUCTIONS
Follow directions for pre-made/packaged pie crust, most frozen require thawing in the fridge three hours before using.
Use TOFUDEE Tofu Press to drain liquid from a block of firm tofu. Let sit for 10 minutes while prepping ingredients.
Preheat oven to bake at 350 degrees.
Heat stovetop to medium heat and melt butter, sauté diced shallots for four minutes or until soft, add in sliced mushrooms and peppers, and continue to stir until cooked. Lastly, add fresh spinach and scallions and cover until the spinach is wilted. Remove from heat.
In a food processor, combine pressed tofu, nutritional yeast, garlic, salt, pepper, and milk until smooth and creamy.
Empty the tofu mixture into a medium to large bowl, then spoon in sauteed ingredients and stir until evenly distributed. Add shredded or diced cheese and mix.
On an even surface, sprinkle flour, and using a rolling pin, roll out pie dough until it is as thick as a quarter, you can go thicker for a more rustic crust. Take a three-inch diameter glass or round cookie cutter, and press/cut out dough rounds.
Grease your mini muffin tin, then place dough rounds into each spot, pressing down to fill the space evenly, and lightly pinching sides until it fits.
Spoon just enough tofu mixture to fill the dough cups to the top. Then place a thinly sliced pepper into each to get that red Christmas pop!
Bake for 25-30 minutes or until cups are firmly baked across the top and the dough is tinted light brown.
Let tofu bites rest on a baking rack then serve with freshly chopped scallions, parsley, extra red pepper slices, or any green topping to make it festive!
