Ingredients
4 cups of chopped watermelon
½ cup salad green
1 block firm tofu
⅓ cup olive oil (extra virgin)
3 tbsp balsamic vinegar
1 lemon juice
2 tsp oregano
2 tsp thyme
Salt (to taste)
Pepper (to taste)
Instructions
Begin by pressing the tofu with your TOFUDEE Tofu Press.
Next, crumble the tofu in a bowl and whisk in olive oil, balsamic vinegar, lemon juice, oregano, thyme, salt, and pepper until everything is well mixed. Place a lid or plastic wrap over the mixture and set it in the fridge.
Meanwhile, place chopped watermelon and Arrugala in a large bowl.
Use a fork to retrieve the tofu from the marinade and place it over the salad.
Drizzle the remaining marinade over the salad as wanted. Finish off with a squeeze of fresh lemon.
