White Tofu Pizza

This white tofu pizza is a great meal for kids, and adults can enjoy it too! It is a great, healthier alternative to greasy traditional pizza. In this recipe, tofu is the base for delicious vegan ricotta cheese. Try it as a weeknight dinner or pack it for your child as a school lunch!

Ingredients

  • 1 store-bought or homemade pizza crust

  • 1 cup shredded dairy-free mozzarella cheese

  • 1 large tomato, sliced

  • 1/2 block tofu, pressed

  • Juice of 1/2 a lemon

  • 1 tablespoon olive oil

  • 1 clove of garlic

  • 1 teaspoon nutritional yeast

  • Salt a pepper, to taste

  • Optional: basil leaves, for garnish



Instructions

  • Press tofu with Tofudee Tofu Press

  • Preheat the oven to 400 degrees.

  • Prepare the tofu ricotta cheese. Place tofu, lemon juice, olive oil, garlic, nutritional yeast, salt, and pepper in a blender and pulse ingredients until they form a paste.



  • Assemble the pizza. Sprinkle shredded cheese over the pizza crust. Place tablespoon-sized chunks of tofu ricotta across the surface pizza. Top with tomato slices.

  • Bake for 15-20 minutes, remove from oven and garnish with basil if using.
