This white tofu pizza is a great meal for kids, and adults can enjoy it too! It is a great, healthier alternative to greasy traditional pizza. In this recipe, tofu is the base for delicious vegan ricotta cheese. Try it as a weeknight dinner or pack it for your child as a school lunch!

Ingredients
1 store-bought or homemade pizza crust
1 cup shredded dairy-free mozzarella cheese
1 large tomato, sliced
1/2 block tofu, pressed
Juice of 1/2 a lemon
1 tablespoon olive oil
1 clove of garlic
1 teaspoon nutritional yeast
Salt a pepper, to taste
Optional: basil leaves, for garnish
Instructions
Press tofu with Tofudee Tofu Press
Preheat the oven to 400 degrees.
Prepare the tofu ricotta cheese. Place tofu, lemon juice, olive oil, garlic, nutritional yeast, salt, and pepper in a blender and pulse ingredients until they form a paste.
Assemble the pizza. Sprinkle shredded cheese over the pizza crust. Place tablespoon-sized chunks of tofu ricotta across the surface pizza. Top with tomato slices.
Bake for 15-20 minutes, remove from oven and garnish with basil if using.
